How do I run the spend by category report so that the data is organised by category and
not split by account and then category?

You can pick just the account you are interested in by applying the account filter. Then the report would by category for a selected account

Sorry but this is not the answer I want. That means I have separate reports. I want to see a report that has all spend by category across all accounts so I can get a total view of my spend bt category. Is banktree capable of doing this?

The category report is sorted by account then category. There is no report with sorting by category then account. You can run a category report for each account in turn.
